FETTUCCINE ALFREDO WITH SHRIMP AND KALE
Perfect for two
This a such an easy, healthy, and quick meal that’s great for dinner. I love to do this when I don’t want to spend a lot of time cooking but I still want to make a quick delish semi healthy meal. Sometimes I’ll switch it up and make it with chicken sausage, and mushrooms! enjoy!
what you need:
1/2 lb. - 1 lb shrimp (protein of your choice)
1 bunch of kale
mince garlic (I use 2-3 cloves)
1/2 bottle of Alfredo sauce (I get mines from Trader Joes)
1/2 cup - 1 cup chicken or vegetable stock
pepper (feel free to add salt if needed. I don’t add it because the stock and sauce both contain salt already.)
egg noodle pasta (or any pasta you prefer)
here’s how to make:
olive oil (about 1tbs)
toss in some minced garlic with oil
brown the mushrooms
add the shrimp (I cut mines in half)
add some chicken/veggie stock, wait until it comes to a boil then pour in some Alfredo sauce. bring to a simmer.
give it a good mix and then put in the kale
simmer for a 5-10 mins
then your ready to add to your pasta!
